I can work in partnership with an established team to discuss and try out new ideas, or I can help to establish these roles, particularly in a new establishment. I can also design and deliver a comprehensive training programme which can include any of the following;
- Understanding tea and how to serve it at the highest standard
- Tea and food pairing
- Understanding tea brewing, and how to adjust the brewing technique depending on tea type
- Tea storage and tea buying
- The etiquette and history of afternoon tea
- Management of your tea menu
- How to develop your tea menu , if necessary improving the selection of teas on offer, bringing to the list quality teas with style and personality, within different price bands
- A ‘Tea Tasting Book’ can be created detailing each tea from the menu, for staff and/or customers to consult. Each tea descriptor will be accompanied by its own anecdotes, origin and style as well as my own tasting notes
- Training for employees
- This can cover the key areas of tea knowledge, including basic tea types, tasting, and tea service (e.g. communication and serving). I can provide a training pack so that each new member of staff can be included and brought up to the required standard
